Our Manifesto

My Story

I started working in kitchens as a teenager and by the time I was 24, I was running my own busy kitchen. A previous brief foray into fine dining had made it clear - I loved making delicious food and using it to bring people together, but I also cared about ethical and sustainable practises to use organic, local, free range food, and to treat people well and fairly. I implemented as much of this as I could in my kitchens, and I also spent time working and volunteering for charities and organisations that shared my ethics.

When I was 32, I became very ill with a serious autoimmune disease. A very long, slow recovery meant I had to rethink my career of working long hours in stressful kitchens I could no longer immerse myself in the high pressure world I had previously thrived in.

During my recovery I couldn't eat the same way I used to. I was highly sensitive to sugar and carbohydrates and anything too processed felt like poison. The medication I take has changed my body and my was telling me it needed nourishment to repair.

Fortunately, I can now enjoy most food, but I've also come to understand the profound impact of a healthy diet on my well-being, given my conditions. This realisation has instilled in me a desire to share the gift of good health with others, helping them live as happily and healthily as possible.
